I Say Tomato

Shopping my local farmer's market this time of year opens a door of endless opportunities to use my Cuisinart Stand Mixer.  Making fresh tomato sauce takes no time at all, using the food processor attachment. A basic marinara sauce plays a versatile role in the kitchen.  A batch that starts out as nothing more than pureed tomatoes, garlic and fresh basil can become the base for many more dishes like Bolognese sauce or French bread pizzas.  October is the last month of the tomato harvest, so why not try your hand at making some homemade marinara sauce?
 
As with many of my recipes, I have the long version for days my husband and daughter aren't underfoot and the shortcut, for which I more likely have the kitchen time to dedicate. 
 
Preparing fresh tomatoes for sauce usually involves cutting an "x" on the underside of the tomato (also known as scoring) and then immersing them in a pot of boiling water until the skins slightly wrinkle, a sign they are ready to be peeled from the flesh. 
 
What's the solution for a busy schedule?  The microwave!  That's right, this mama uses her microwave, and isn't afraid to admit it.  Most days, I just want to make a delicious, homemade dinner for my family in as little time as possible... and that's where my microwave comes in.  After scoring the tomatoes, place them in a deep, microwave-safe glass bowl and cover.  I have glass casserole dishes with covers that I use, but you can use plastic wrap too.  Cook them on high for five minutes or until the skin wrinkles, and is slightly peeled away from where the tomatoes have been scored.  Let them cool, then peel the skins off.  Place the peeled tomatoes in the food processor or blender attachment of your Cuisinart Stand Mixer, and puree to desired consistency.  These directions are also listed in the recipe below.
 
BASIC MARINARA
Plum tomatoes, the thin, long variety, are traditionally used for making tomato puree but this is also a great use for the more common beefsteak type too if that's all you have on hand.
makes eight cups
 
TOOLS
Sharp knife for scoring and chopping
Cutting Board
Deep skillet or small stock pot
Heat-proof spoon (I use a wooden spoon just like my nana)
 
INGREDIENTS
3 ½ pounds fresh plum tomatoes
1 Tbsp extra-virgin olive oil
3 medium cloves garlic, chopped
2 Tbsp fresh basil leaves, chopped
salt and pepper to taste
 
TO PREPARE TOMATOES:
Score the tomatoes by cutting an "x" at the bottom. After scoring the tomatoes, place them in a deep, microwave-safe glass bowl and cover.  Cook on high for five minutes or until skins begin to peel away from meat of tomato.  Let cool, then peel and discard skins.  Puree in food processor attachment of Cuisinart Stand Mixer.
 
TO MAKE SAUCE:
Heat skillet or pot over a medium flame.  Add olive oil and heat for 30 seconds.  Add garlic and sauté until fragrant and just softened but not browned, about 45 seconds to one minute.  Carefully pour in pureed tomatoes and stir well.  Increase flame to high and bring to a boil.  Reduce to a simmer, add basil, season with salt & pepper and cook for 20 minutes.
